PPB & Raisin Muffins

These muffins taste amazing and even better they are good for you too!
Note: Only Gluten Free if using Gluten Free oats.
3 cups rolled oats (270g) 1/2 cup xylitol or sugar 3 tbs PPB Handful of raisins 2 tsp baking powder 1/2 tsp salt 2 eggs plus 1 egg white 300ml milk 2 mashed bananas 1 tbsp cinnamon
1. Preheat oven to 175 degrees C. 2. Mix together the oats, xylitol/sugar, PPB, cinnamon, baking powder and salt in a bowl. 3. In a separate bowl whisk together the eggs, mashed banana and milk before stirring into the dry ingredients. 4. Stir in the raisins. 5. Spoon the mixture into 16 silicone muffin cases (or spray regular muffin tins/paper cases with oil to stop the oat mixture from sticking) and bake for around 20 minutes until golden and cooked all the way through!
