These no-bake cookie dough bites taste amazing.. you'd never believe they were healthy too!
1/4 cup (55g) chickpeas or white beans
1 cup (100g) ground almonds
3 tbsp xylitol*/stevia/sugar
1 tsp vanilla
4 tbsp PPB+2 tbsp water
2 tbsp dark chocolate chips
1. Add all of the ingredients, except the chocolate chips into a food processor & blend until smooth.
2. Scrap out the mixture into a bowl & add in the chocolate chips with your hands.
3. Scoop out a heaped tablespoon of the mixture and roll into a ball with damp hands. Repeat until all of the mixture has been used up.
4. Pop onto a plate lined with baking paper & chill in the freezer for 20-30 minutes before enjoying or storing in the fridge for later!
